Mont d’Or is a seasonal soft cows’ milk cheese available in the autumn and winter, it is named after a peak in the Jura Mountains and is protected by AOC. Production of these small young cheeses traditionally came about to account for the fact that during the autumn months milk production in the herd naturally decreases and the protein to butterfat ratio in the milk alters. This, alongside the deteriorating weather and increased difficulty in transporting the milk to the fruitières made the production of the large Comtés less viable in the winter time. The Mont d’Or was made instead to feed the farmers and their families in the leaner months.The AOC states that the first Mon’t d’Or of the season is made no earlier than August 15th so these wonderfully decadent cheeses are available to buy from mid-September and are on sale until early March.
